Several days ago, I returned from a lovely week in Cabo San Lucas, Mexico with my two West Coast sisters, Diane and Lori. Liz and I plan to record a podcast about our respective mid-winter adventures when she — and her muscles — recover from her Park City ski vacation. In the meantime, I thought I’d share a few photos of the stunning scenery and the food we ate during my trip. Enjoy!

Each day started with a walk on the beach to watch the sun rise, which was so invigorating and beautiful.
One morning, I made scrambled eggs with cheese, smoked salmon, and sauteed red bell peppers for breakfast, and served them with a side of tortilla chips and a refreshing glass of mango nectar.

Chicken, bean & cheese tortillas were on our menu for many lunches, and we always had them with avocado and salsa on the side. Cerveza? Si!

I attended a cooking demo conducted by Chef Manuel Ramirez at the Pueblo Bonito resort. I was hoping to learn about Mexican cuisine, but the chef had other ideas and demonstrated how to make Kung Pao Pork instead. No worries though, because it was still a nice way to spend an afternoon.

Nopales (cactus leaves) were plentiful in Mexico, but I have not been able to find any in the Boston area. I’m itching to make nopale salad, but I may need to wait until I go back to Cabo some day.
If anyone knows where I can buy cactus leaves around here, do tell …

This was the view from our patio at sunset. I’m sure you can understand why it was so hard to leave Mexico and return to cold, rainy Boston.

You can find no pales in most Mexican stores. They sell them in small jars.
Loved your post! Our family (kids, too) are heading back to Cabo the end of June. My husband and I spent our 10th anniversary there. Can’t wait to explore with the kids. We love to try different foods and have some favorite places picked out off the “tourist path”. What I love most, though? Having a kitchen in the condo so I can cook with local ingredients!

This looks fabulous, so glad you had a nice time! Nopales are so delicious, but I have yet to go searching for them here. When I worked at Extension they brought in a bunch for us to take home
