Strawberry Shortcake Hot Dog

Last week was Josh’s 14th birthday, and I wanted to surprise him with a fun snack when he came home from school.  Knowing that two of his friends had planned to come over with a “homemade” chocolate cake (to see a photo of that infamous cake, visit our flickr page) I decided to make something a bit healthier, a new recipe idea for Strawberry Shortcake on a Bun.

Josh eating Strawberry Shortcake on a BunI got the idea from food stylist, Dan Macey, whom I met earlier in the week while working on a project in New York. Dan and I were chatting about our favorite kid-friendly recipes when he gave me this one: Take a hot dog bun, brown it on both sides with butter, sprinkle with sugar, and top with strawberries and whipped cream.  It certainly sounded like a clever way to encourage kids to eat more fruit, so I took Dan’s concept, made a few Meal Makeover Mom modifications, and created a snack that Josh absolutely loved (Simon and his friend, Liam, also gave it rave reviews).

Strawberry Shortcake on a Bun
Makes 2 Servings

  • 1 teaspoon canola oil
  • 2 whole wheat hot dog buns (I bought mine at Trader Joe’s)
  • ½ teaspoon granulated sugar
  • Pinch ground cinnamon
  • 2/3 cup mixture of thinly sliced strawberries and blueberries
  • Dollop whipped cream

1. Heat the oil in a nonstick skillet over medium-high heat.  Open each bun and place open-face in the skillet. Flatten gently without splitting the buns.

2. Cook 2 to 3 minutes until golden brown. Flip and cook an additional 2 to 3 minutes until the other side is also golden.

3. Remove from the skillet and sprinkle with the sugar and cinnamon.  Top with the berry mixture and “garnish” with whipped cream (the whipped cream should look like ketchup running down the center of a hot dog).

Nutrition Information per Serving: 180 calories, 5g fat (0.5g saturated), 220mg sodium, 28g carbohydrate, 4g fiber, 5g protein, 60% vitamin C

This recipe should appeal to kids of all ages. It’s playful – which kids love – and it’s nutritious, which makes moms happy.  It provides a novel way to introduce more fruit to the diet as well as more whole grains.  Let us know what your kids think of it!
