Grilled Mozzarella & Smoked Salmon Panini
by The Meal Makeover Moms on April 9th, 2009We’re excited to be part of the first official Grilled Cheese Pageant, hosted by food blogger, “Panini” Kathy. To enter the pageant, we used our Cuisinart GR-4 Griddler – a nifty kitchen appliance which has somehow found a permanent home in Janice’s kitchen (no, Liz is not complaining, she’s just “sharing”). Anyway, the recipe we created was something we had for lunch last week after a morning posting to the blog and recording a podcast. It’s super easy, has just four ingredients, and is off the charts when it comes to great flavor. It’s also nutritious thanks to the calcium-rich cheese and the salmon, an excellent source of heart-healthy omega-3 fats.
Grilled Mozzarella & Smoked Salmon Panini
Makes 2 Servings- 8 slices French bread, sliced ½-inch thick
- 8 mini fresh marinated mozzarella balls, drained and thinly sliced
- 1 ½ ounces smoked salmon (lox), thinly sliced
- 2 teaspoons extra virgin olive oil
1. Preheat the Panini grill on high heat. Lightly brush one side of each slice of bread with the olive oil.
2. Arrange 4 slices of bread on a work surface, oiled side down. Place the sliced cheese evenly onto the sliced bread. Top with the salmon and the remaining slices of bread, oiled side up.
3. Place sandwiches in the Panini press and cook until golden brown, about 3 minutes. Slice each sandwich in half and serve (two sandwiches per serving).
We can’t wait to see the other recipe creations on Panini Happy on April 17.

The marinated mozzarella and smoked salmon sound so good together – way to go, Moms!
I want to like salmon, I really do. But I just can’t. So I make it for the hubby..and apparently I cook it well. Oh well.
Hi Pam: how about adding some flaked tuna or tiny cocktail shrimp instead of the salmon? You’d still be getting the healthy seafood and the yummy panini!
