I’m so excited that I found your blog! I recently purchased your cookbook and am loving it! I began using all organic/natural products for my family a few years ago, and it was nice to find a cookbook that also shared many of my same values. I did have a few questions though, and am not sure if this is the right place to post them?

I have changed ingredients in several older receipes to make them healthier for my family. Your receipes have been great! I was curious – I have totally replaced All Purpose Flour and only use Whole Wheat. In your book, I noticed that you use half of each – is this a taste thing or is the All Purpose Flour really needed? Also, I stopped using salt about 10yrs ago and noticed that you use Kosher salt in several receipes. Again, is this needed for taste or is it needed?
Hi Amber:
For us, it’s about compromise. Most recipes call for only white flour. Making the switch to all whole wheat might be too radical for some people — and it could make the recipe a bit dense. If you use all whole wheat in some recipes and they are well accepted by your family, by all means keep it up!
As for salt, we use a moderate amount of kosher salt in many of our recipes to kick up the flavor. Diamond Crystal Kosher Salt has half the sodium of regular table salt and is our favorite brand.
