Liz, I thought you would like to know that I tried your pumpkin chocolate chip pancake recipe and my kids loved them! My son even incorporated them into a Mother's Day poem called "Mom is...". His third line reads "Mom is warm, fluffy pumpkin chocolate chip pancakes on a cold, brisk morning." Apparently his teacher asked when she could come for breakfast!

I guess it doesn't take as much to change my kids' eating habits as I thought! Thanks for the inspiration!

Margaret Counts-Klebe

I have been getting my kids to eat more veggies by having each of them choose an entree that includes vegtables and a dessert that we make together during the week. They choose new ones each week, they have been encouraging one another by saying "great meal", "Good job". It's not only helping them learn to cook, eat vegtables, it's teaching them to support each other grow closer.
